As somebody who has been trying diets for almost a decade and has kept 30 lbs off for over two years, I will give you my unsolicited diet advice:
If you get tired of keto, just switch to counting calories and get a wide variety of foods that leave you satisfied. Most hard diets don't work in the long run because you get burnt out and go back to your old habits. The trick is to make your new habits into permanent, sustainable habits. Take about a month to count calories, see how your weight responds, and then figure out what your maintenance is. Mine is 2400 calories. As long as I don't eat more than that, I won't gain weight. It's like clockwork. I am never hungry if I do my diet right (except maybe on days where I do cardio, as opposed to lifting).
Figuring out the right food substitutions makes all the difference. I used to eat 120 calorie bread on my sandwiches. Sarah Lee makes WW for 60 calories. I often eat two sandwiches a day, so that's 240 calories saved right there, and I didn't even notice the difference.
