Recruiting Football Talk VIII

What’s your take on this offer I got?

(His team) Kamara, Whittington, Jayden Daniels and 3rd rd pick 2025 for (my team) London, Chubb, Penix

ARod is my current qb, Dobbs and D Jones as backups. Chubb’s injury scares me but my second RB right now is Herbert/Johnson tandem from Chicago. Bad shape in RB
I wouldn’t do that. Like the idea of the London Penix stack down the road.

Nah, brisket ain’t that hard. It’s just a process. Trim, season, smoke, wrap, 202°, meat rest, burnt ends (for the point), eat. It’s easy with a pellet smoker. I’ll take my worst brisket I’ve done over a well-marbled ribeye. It’ll still melt in the mouth, has more smoke flavor, and as much or as little seasoning as you want.

There’s a reason it’s called meat candy…

Eh I've had some of the best brisket out there, and many attempts at replicating it on my pellet smoker has been nowhere near as good. Maybe you're just a brisket prodigy, but I've had a lot more bad brisket than good brisket in my life, whether I make it or someone else does.

Whatever version of Covid this is it's the most shape shifting illness I think I've ever had. Now I can't stop hacking. So over it.
I went from burning sore throat and no other symptoms one day, to sore throat and high fever the next day, to no fever no sore throat but 100% congestion and runny nose the 3rd day with a persistent cough. Never had a sickness act like this. Always starts with congestion and runny nose historically.

Same, I know people always rave about ribeye "melting in your mouth" but I just don't like chewing on fat I guess.

Top Sirloin done right is hard to beat for me but overcooked it'll be tougher for sure.

With a great ribeye you shouldn’t be chewing on fat. A great cut well prepared means the fat does melt in your mouth and adds a ton of flavor. It’s not supposed to be like gristle that requires a lot of gnawing.

I fell in love with the ribeye once I got a Kamado Joe. Now I cook it slowly for some smoke then reverse sear it. Definitely a favorite now.

Ok coffee preferences for everyone?

I like black (Americano for my snobs) medium blend. Starbucks is too bitter.
I get 5lbs of single origin beans from Intelligensia every month. Nice to have something new every month and their quality is excellent

Exactly. If it a good piece of meat, well-butchered and well prepared, the fat should be more like fat in bacon...rich, melty, and very tasty. Unfortunately, the gnawing variety is all too common.

Dick West: check his stats.
Groce.
