buddy is a Chef, er was. Says most our fresh Seafood in US comes from Louisiana, save local shrimp or oysters. Most aficionados know when they go to market what the differences are. I dont.
Sometimes local market gets fresh caught snapper, grouper, or Cobia. If what my friend says holds true, then 'fresh' may mean a few days old.
we go to the beach up and down the carolina coast...Wilmington, Ocean Isle, Hilton Head, Charleston....etc...
we've always found local seafood markets with fresh catch....and most usually have frozen snow/king crab legs just b/c there's always some demand for it....
but when we went to Charleslton last time, there was a restaurant right on the fishing docks, open air bars and seating...anyway, the bars had grills going, so as guys came back from fishing, they'd literally buy the fish off the boat, throw it on the grill....and you just eat and drink. pretty awesome....no menu.
and there's a great little seafood market we go to in Wilmington all the time where we get soft shell crab, local shrimp and whatever 'catch of the day' they may have.......
typically, unless it is really a locally owned place that's not a tourist trap, most restaurants aren't getting their seafood daily fresh, even on the coast....Louisiana is an exception b/c of all the local places that will only use louisiana product. there's just a ton of them down there that do that....
anyway...when i go to wherever on the coast, i'm either finding the market buying it and cooking it myself, or i'm searching out the true local joints, like the ones mentioned above....especially if there's a specific cuisine to the area...low county, cajun etc....
i can get crab legs and lobster at the store around the corner at home.
