I know it's the ESPN Sunday night game so I just assumed it was always scheduled to be at 8:00 because of that.

I don't think it was always at 8:00 pm. I have a print out of the schedule showing its 1:05 pm. But obviously this print out is incorrect.

I think part of the tv deal MLB has with espn is that if espn wants a game for their prime time slot they can change the game's time. It makes sure that espn can show a quality game and not have to pick from games that are scheduled at that time.
