Since I only had a hot-water canner at the time, I made a lot of salsa. One called for roasting the tomatoes, and holy cow, that was good!I've made and frozen "tomato base" before, but, these past two years, I've just managed to eat/share my entire crop (and that's without Joe stealing a single mater).

Now we’ve added a pressure canner and a freezer in the basement, so I’m planning on putting up a lot more tomatoes this year, in one form or another. And I’ll start pulling out under-performing maters at Labor Day to make room for fall vegetables, so we should have plenty of green tomatoes for chow-chow.
