So hate to agree with Tin Cup, but if you're gonna freeze a bunch and keep them frozen longer than a few days you should blanch them for your best results.

Of course you don't have to. You don't have to put them in a bag and seal it either.

So I have determined that if I am going to dry peppers they need to be cayenne or some other thin flesh variety. Took 24 hours to dry the jopalenos sufficient to grind.

Never tried drying Jalapeno for that reason. Actually, I don't dry peppers. My son does, but it's hot peppers he's chosen to grow beside my stuff so he can dry, flake, and grind. I make hot pepper vinegar sauce with my hot peppers.

Busy holiday weekend. Had to take advantage of some days off.

Canned 3 quarts and a pint of tomatoes. (Easy peeling hack after some experimenting...Cut the ends off and place them cut side down on baking sheet. Under low broiler for about 10 minutes or until you know skin is releasing. Let them cool enough to handle. Grab them by the uncut end and pop them out like a zit. So much easier than blanching and hitting the cold water. Just popped them out straight into jar. For bigger maters, bought a Euro peeler that works on soft skin fruits and veggies from Home Goods. Peeled maters like a charm right under the skin).

Put up two quarts and a pint of hot pepper vinegar. One jalapeno, cubano and garlic. Two with Tobasco, Jalapeno, and Cubano.

And finally, 5 pints and a quart of green beans.

— I love my kitchen; exactly what I wanted (yay for down-to-the-studs gut-jobs!), other than I really wanted more counterspace. But real estate vs. remodel costs: something’s gotta give.

No, lol, I let that go. The possible rewards did not balance out the real costs and potential oopsies. I have a small secondary sink immediately to the right (=3”) of the range with a pull-out faucet. The coffee-maker sits to the right of the sink (meaning further away from the range), so the coffee part is under control, and the big-ass pasta pots are dealt with via the pull-out faucet.

I would post a pic, but some a-hole (looking at you, @theFallGuy* ) would criticize my lack of perfection in counter-scrubbing, but maybe if I can shine up erething before Other Person Living Here can make his mark, I will do so. Maybe.

ETA: Other Person Living Here is heating up BBQ sauce, so I ain’t going anywhere near that.
