Got picked for an Iron Chef/Chopped type competition at an upcoming barbecue cookoff. We have one hour to prepare one appetizer and one entree based on the ingredients in the basket. I can select two people from my team as sous chefs. Looking for ideas. Here is what I know:

- In the basket will be a Ribeye steak, some type of shellfish, and three additional mystery ingredients.
- The only cooking appliances will be a Coleman stove and a Weber Smokey Joe.
- We're allowed to bring basic pantry staples
- They will provide electricity for blenders, food processors, etc.


Any ideas?

That sounds fun!

I would guess one of the ingredients will be chocolate or some type of candy. Maybe go back through some episodes that feature beef and shellfish.

I would think most would go with shellfish for the app and beef for the entree. Maybe change it up?

Lol, a ribeye appetizer sounds good to me!
 
Got my hands on a 10 pound prime beef brisket from Costco. Going to smoke it all day on Sunday. Going to try something different for my rub this time besides just basic SPOG. Any suggestions?

Coffee/espresso grounds with some dried chilies of preference, mixed with a good basic cowboy rub (S,P, garlic, cumin, onion, smoked paprika, and maybe a little brown sugar to balance the heat).

I like the sound of that. I’ve heard of some rubs using coffee grounds but haven’t tried it yet, maybe I’ll do that this weekend. Thanks :hi:

A little goes a long way. I use some on Ribeyes and pork tenderloin too, from time to time.

An easy one is just toTbsp black ppepper, thyme and freshly ground coffee , then add 1 tsp salt. rub it in and roll with it.

Kielbasa sausage, bacon, cream cheese with green chilis, brown sugar cayenne chili powder, then BBQ rub. Insanely good.

When is the event? Are you still putting together ideas? Should be a lot of fun.
