Did burgers for 10 last night - smash style. Everyone lost their minds.

well spent two hundred bucks

I saw a smash style recipe years ago called something like Route 66 or Oklahoma burgers. Basically, you let a small pile of onions go on the flattop for a few minutes until cooked as much as you like then smash the burger on top of them. Flip once and bam...very good...if you like onions.

:rock: Pics or it didn't happen. JK - Did you mix anything in with them or stick with a traditional bad ass burger?

2 oz or so burger balls.
Salt and pepper
cranked griddle
no oil
put the ball on the griddle and smash flat holding for about 10 seconds
scrape it off to flip to ensure all that crust stays.
make doubles with a slice of Am Cheese in the middle.

They cook really fast so be ready.

Put on toasted bun (also on the griddle)

So these were kinda Steak n Shake style

Has anybody here ever used Halloumi? Had some leftover sheep's milk a couple months back from another cheese that I was making so decided to try it on a whim. It finished brining a couple of days ago, and am now looking for ideas on things to try with it. Was thinking about using it some Mediterranean chicken kabobs, or making halloumi fries and smoking a pork shoulder to make halloumi bbq nacho fries.
 
Ok... I tried it. Hit up Costco for a few prime strip steaks. Seared them on a hot grill, then placed then in a cast iron fry pan back on the grill with butter and several cloves of garlic. Wowsers... very good. These are thick steak and in general difficult to get med-well for wife. But this way gets that done nicely. Of course I like mine MR to Med....

As well I picked up a brisket and have that trimmed and in the frig resting... will put that on the smoker in the AM. And around noon I will add 3 racks of St. Louis style ribs... cooking frenzy.

Fresh Market has whole Prime tenderloins on sale for $13/pound. I'm reverse searing one of those tomorrow and pairing with some ginormous grilled prawns, Flemming's-inspired potatoes, and arugula salad with grilled radishes, strawberries, and goat cheese. Should have two happy moms!

I will have to swing by there tomorrow. I usually wait for choice to go on sale at Kroger, but that's a good deal on prime.

Amazon has the 36 (4 burner) Blackstone Griddle for 247 (free shipping). Heck of a deal and it's the new version with the rear grease system rather than the front one that some people had problems with.
 
Did it again tonight... I had 2 strip steaks left over from Sat... so on the grill they went, and after a good sear, into the cast iron pan on the grill with at least a dozen cloves of garlic and a stick of butter. I need to buy someone a beer for mentioning this method. Soooo good. Also grilled a mess of asparagus smothered in butter and garlic.
 
I have a Traeger Little Elite and I've been very happy with it other than it will not go to a high temp. Based on some things I've read, this is not real unusual. Typically, I use the grill to smoke pork butts, ribs, and other things that don't require any high temperatures. I'm getting the itch for something new and was thinking about a Green Egg or something similar. Thoughts and recommendations will be appreciated.

I love both my Weber Summit S-670 Gas Grill and my Rec Tec Pellet Smoker. I’ve heard great things about the Kamado style cookers, but I don’t have one myself.
 
Just grilled the two ginormous burgers made from my prime tenderloin ground scraps last weekend. Dang, they were good....Major husband points.

See above in the thread, but the Char Griller Kamado is a great entry-level grill. Works well, just not quite as temp stable and not as durable. Nicely priced around $300.

Eggs are awesome, with the only real drawback being the price tag. I have friends with Primos and Kamado Joes, and they are happy with them as well.

At first, I was leery about prep time, dealing with charcoal, etc. But after a few runs and internet instruction, it's really no headache at all. Four accessory products I'd recommend:
- cast iron dual sided grate
- wooden grate scraper tool
- bucket vacuum for easy ash removal
- looftlighter Charcoal Lighter | Looftlighter Electric Charcoal Lighter

My infrared has some age on it and I wish the Traeger would hit the higher temps, so I've been looking at options. Thus far, the Egg is the most appealing...the cost is obviously a consideration but my TEC infrared wasn't cheap.

I guess I've found my next toy, eh?
 
BGE has lifetime warranty. +1 on Looftlighter but be careful, dont hold it against the coals for too long, the aluminum on the end can melt. I also like the Kick Ash Basket. You can get a vacuum for coals at Home Depot for about $35.

Maybe try some Grill Grates to increase the temp for grilling/ searing.

My Kamado Joe was delivered yesterday. Picked up the joetisserie w it. What should be the first meal?

The old line of thinking was do cook something at a relatively low temp (under 400). This allowed for the gasket adhesive to set and the lower temp cook let you familiarize yourself with the kamado.

Not sure all that's necessary now with the high-temp gaskets being used.

Country style pork ribs are an easy intro cook...plus they're very tasty. Bone in, brine (if you want), season, add wood chips/ chunks to the lump (if you want)...hard to mess up.
