Smoked mac and cheese on the rec tec mini and smoked ribs on my bigger rec tec. I absolutely love the Rec Tec and highly recommend it to anyone looking for a pellet smoker.

Very nice... ribs look great. Looks like no wrapping, just smoking. If so, are the ribs tender. They look quite good. I have been using the 3-2-1 so some time and might like to try just smoking the ribs without a wrap.
 
Sounds yummy. I saw one recipe that stuffed them with smoked almonds, which was interesting.
Yeah I've seen that too. I had them at a restaurant a couple weeks ago, stuffed with blue cheese, and I've been eager to try cooking them. My wife was a huge fan.
 
I'll probably have to do the goat cheese for mine. She won't eat blue cheese unfortunately. I might it try it with gorgonzola.
 
You put any kind of rub, seasoning, sauce on the ribs after they are cooked? They look great. How manyare you cooking for?

Thank you. I do a dry rub before I cook them and then I spray a little juice on them while they’re cooking every hour to keep them moist. I don’t do anything with them after they come off except put them in a tin, cover them in foil and let them rest about a half hour or so. I don’t sauce them because I like the taste better without the sauce, but I always have it on the side for whoever wants it. I love to cook, so I just cooked them to have in the house as a meal prep for the week for my family.

Thanks! No, I definitely don’t wrap. I like them way better not wrapped and they are super tender. I like mine to still have a bite when you chew it off the bone which they do if I cook them to the right internal temp like it would be for competition cooking. They’re still super juicy and perfect. Some people I know like them better falling off the bone completely so they are even more tender and basically just melts in your mouth. What I do for them is cook them to a higher internal temp and basically what I feel is overcook them, but that’s what they like so I do it. They turn out great too, but I like the other ones better.

Grass fed Bone in Ribeye for Sunday early dinner. Love the sear and flavor that I can get from my Komado Joe. No reason to go to a steakhouse anymore. Just bought an instapot. Cooked some beef ribs that came out pretty good, but there’s been a bit of a learning curve

I have to ask where you got the Iberico. I've thought about ordering some after having the thinly-sliced ham and an unbelievable ribeye at Curate in Asheville. That ribeye was perhaps the most delicious cut of meat I've ever eaten.
 
Received my order from Snake River... SRF Gold Ribeyes and T-Bones. Pulled one of each for the grill tonight. Will see how this comes out in terms of melt in your mouth flavor.

Welp, messed up and left my last bag of lump KJ big block outside after cooking one night and it rained. The bag was closed but the coals were definitely pretty soaked. Can these dry out and be usable or is that bag basically ruined? It was my last bag.

I'd open the bag and spread the coals out in the sun tomorrow. Will be fine.
