I have to ask where you got the Iberico. I've thought about ordering some after having the thinly-sliced ham and an unbelievable ribeye at Curate in Asheville. That ribeye was perhaps the most delicious cut of meat I've ever eaten.

There's a guy in Texas who is raising Iberico hogs. You can find him at acornseekers.com. I can't wait to try some of the other cuts that I picked up.
 
Nothing fancy, but I threw the Tennessee Pride on the Traeger this morning. My biscuits did a happy dance when these landed on them!

Nice. Is there a way to use just heat with the Traeger or do you have to use wood pellets?
 
Not smoked or grilled, but damn tasty nonetheless.

I do my own pizza dough. I use Cento Anna Napoletana Tipo"00" Extra Fine Flour and Fleischmann's instant yeast. For cheese, I use a mix of Italian cheeses.
Good flour. Should go a long way in getting an "Italian" pizza. Aren't those chunks/slices of mozzarella? Any particular kind?

I actually do my pizzas on a Kamado Joe Big Joe. I would love a pizza oven but the wife would kill me if I got another "gadget" to cook with. As for the cheese, it is a mixture of shredded cheeses (mozzarella, provolone, asiago, parmesan, romano, and fontina). The brand of cheese is either Sargento or the Harris Teeter brand,

This is the dough recipe I use.

Did you make your own crust? If so what flour , yeast type. Cheese type?
I didn’t use my own crust because I didn’t have time to experiment that much with it. The grocery store near me sells dough balls and I rolled it out and used that. As far as cheese goes I used fresh buffalo mozzarella.
 
Found this cleaning out the freezer tonight. I think I'll make some burgers. :)

I cook mine on bge. Use their heavy pizza stone and greet the Heat to 650 or more.
I also cook pizza in the oven at 550.
At 66 New Toys are just something else to take care of. Sorry to get you two mixed up.

Nothing like real mozzarella.
I don't know Jack about raising an animal for milk, but raising wter buffalo for cheese might make sense on a dairy farm???. My understanding is there are only 1 or 2 in the US.
I get Publix dough occasionally.usually add a little breD flour to get a thinner crust.

No worries. I use this rig for my pizza to get the stone higher in the Big Joe.
