We have 1 facing our W. lanai screen and we're having 2 more installed this week for the 2 large N. facing screens on the Manatee River. Expensive but I don't want to shop-vac/ squeegie (sp?) every time it rains in Bradenton.
 
Turned out well. 16 hour cook. Started out just over 16lbs before trimming. Out of the 10 or so briskets I've done, this was first one I've done with fat on the bottom. It had the best bark of them, but wasn't quite as moist in the flat. A trade-off I guess. I'll need more research. btw, the onions from the drip/water/apple cider pan were amazing. My wife asked me to add extra ones next time.

OK. So, tonight I cooked the dry-aged strips shipped with the "Family Pack" from Victory Beef: Victory Beef Family Pack #1

Here's my review: The ground beef is very good. It was delivered with 10 (1 lb.) packs. We made burgers with no seasoning to get the taste of the beef. Outstanding! The Bratwurst were good. A little "Short" for buns but grilled and sliced into rings with mustard and BBQ sauce, perfect.

Now the NY Strips. They were good. Here are the pics:

Will I order the family pack again? Absolutely! For the price and with what you get it's hard to beat.

Glad you liked them. He's a local guy to me. I've had the ground meat, but have not done the beef ribs or brisket yet I have. Most of you ordering these meats know pretty much all of it is grass fed. however, Victory is one of the few that also grass finishes. So, if you are looking for cowboy, slightly gamey beef you will definitely like theirs. I love venison, elk, moose, black bear, antelope, etc., so I can take my beef store bought or real.
 
I ordered 80lbs. of Lump from Costco and it arrived yesterday. True to it's name it is large....can barely stuff it into my MB gravity fed. No results, yet. Will report back after a cook or 2...or if anyone has used this please jump in.

I use the Cowboy brand you get at the grocery store. Big bag for under $10. Burns well. Some big chunks, some medium, some small. Have also tried royal oak and B&B. Also like the B&B. I tried a brand one time that was busted up hardwood pallet charcoal.

the biggest thing i've noticed is the lump charcoal burns far better in the smoker than it does in my weber kettle grill. It will not last long and dies out in the grill. So, I use briquettes for that. And lump coal or briquettes in the smoker depending on what I have in stock. In my smoker, I get good burn times from either. I have also tried a few premium brands of charcoal. there's a reason why Kingsford costs you some bucks.
