I'm a big fan of just doing a whole bird.


Definitely planning to try that. Haven't had the time yet. I don't like dark meat but the wife and oldest son will take care of that part.

I cook breasts at least 2 times a week either in the oven or on my gas grill. Won't be using either of those methods anytime soon.

Do chicken thighs next. Best chicken option in the smoker imo.


I've heard they do well. I just don't like them.

Wife bought some wings and legs(don't like those either) she wants me to do sometime. I hope I can make them turn out ok. Not sure if I'll fry after to crisp up or try to just throw on my gas grill on high.

Give thighs a second chance. Google "chicken bombs" and get back to me after you cook them.

Get the boneless thighs and wrap in bacon.
 
Just bought a Blackstone Griddle and an Ooni Pizza oven (pellet fuel option) for Memorial Day. Having concrete poured tomorrow for our patio and then unboxing and using them this weekend. Can’t wait!

Anyone have any Blackstone recipes they wanna share?
 
Pork Butt 2nd attempt update:

Reading through this thread has helped me A Lot! Thanks for sharing all y'all do in here.

Our second attempt at smoking a Pork Butt turned out utterly amazing! I started at 0740 and it finished at 2135. Let it rest for 40 mins and then started pulling. At 2240 I made my first sammich and it was gone by 2243 😁.

I love the bark! I love the meat! Hell, I even enjoyed a couple bites of fat!

Grocery stores are starting to sell pre-packaged thin-sliced/shaved ribeye. Salt, pepper, garlic and onion powder, worsterchire. Let it sit for awhile. Fry it up with onions and green peppers for Philly cheesesteaks.
 
Sorry no pics (had a struggle), but I smoked a 14 lb pork shoulder butt and did poached beer brats for the brood coming over. The Pitt Boss pellet smoker wouldn’t stay at 225. It would surge up past 250 or dip below 200. Wrapped and pulled before 200 degree internal temperature and finished one side in the oven and put the other in the smoker. No surprise, the one finished in the smoker was better but both pieces turned out great. Wife pulled it with a mixer…anybody ever try that? Errybody happy and I look like a very tired culinary genius. Didn’t sleep more than an hour but I’m off tomorrow.
 
I have never tried to pull pork with a mixer. Never even heard of it. But, the next pork butt I smoke, I am going to give it a try. I will probably sling pork everywhere but we shall see.

I've been told the mixer is great, but I've never tried it.
