The Grill and BBQ thread

Hi George!

I'd like to welcome my friend George to the thread. He's a Vandy grad and an Auburn fan, but it's ok...he's a great foodie friend and an all around SEC football fan.

He's only lurked the Football Forum in the past and picked up some recipes from the tailgating thread. He didn't know this thread existed until I mentioned it. He's cooked at least one recipe from Boca and when he mentioned it and the name, I realized he has to be a regular lurker.

He told me the LSU site has a great food thread...TigerDroppings.com.

Funniest thing he ever told me was when he pointed out you never see then Congressman Zach Wamp and Former UTC Coach Buddy Nix at the same time and when you hear them on the radio, they sound remarkably similar. Is it just a coincidence? Chattanooga folks will get it.

I'm smoking a 2-lb hunk of bologna stuffed with pepper jack cheese tomorrow.

I've never smoked bologna before; hope it turns out.

I also tried this. I cut x patterns on one side of the bologna roll. Then rubbed it down with mustard and then patted it down with brown sugar. Once it was done I fired up the grill to blacken the slices for our sandwiches.
Basically used this guys recipe on youtube but forgot the soy sauce. Absolutely delicious.

What?! You guys afraid to smoke/grill in the snow? :) :p

Last year when we had the 4" snow storm I turned on the Weber ng grill just to watch it melt the snow covering it. It was mildly entertaining. The snow had no chance. :)

actually I have nothing big enough to smoke,now that is a shame :)

I've still got some smoked freezer turkey and ham to eat
 
I've got to make a smoker run at the grocery store in a week or so,i owe a smoked ham,so i'm going to FIRE it up good :)
 
well some time this coming week the ole smoker is going to be fired up,I'm hoping to do a ham and a hunk of tenderloin,hmmm maybe a couple of chickens too,i do need to expand a bit and maybe get a hunk of beef,what would be an inexpensive chunk of beef to smoke and still be good ?

yea I'm cheap :)

ugh i need to be cleaning the damn thing out first,but that probably isn't going to happen :)

Get a Chuck Roast and have pulled chuckies

Sounds interesting. Season up a chuck roast and cook at what temp? What temp do you pull it up? Thanks.

Same as pork take to about 200-205 and pull. I like to use a combo of cherry and oak chips on beef

I like the onion rolls/buns for beef
Make u some garlic butter and smear on the inside of the rolls/buns and grill off then pile on the meat.
I like a to make a horseradish sauce with sour cream and chives to spread or pour over the top of the meat
