First what kind of grill do you have.
And if you'll rinse it first it will wash the salt out

Soak it in water for several hours. Change the water a few times. Sprinkle pepper or pastrami seasoning on it and slow cook it to 165. Then wrap in foil and take it up to 200, or so. It will be very tender.

what will be some good chunks of meat to put in my smoker these days ? since i'm suppose to be cutting down on the Bad Cholesterol from some blood work that was done
i assume Pork Tenderloin will be fine,I think I'm suppose to cut down on red meat and ground meat too

I'm about sick of chicken,when i had some major heart surgery I ate a ton of chicken and I do have to say that I'm tiered of it and have been for several years .not saying I'm going to give it up

I just learned about pig shots this week. Can't believe I'd never seen them before. Those will be made is short order!
They are a crowd pleaser. The last time I made them I used Roger Wood smoked sausage but really any Kielbasa, etc. will work. I use a mix of cream cheese, cheddar, and canned chilies for the filling and pipe it in. Use a decent bacon...unlike ABT's where a thinner bacon works well. You need the side-wall to be sturdy enough to hold the filling.
