I've got a Grobbel's flat cut corned beef brisket I need to cook and was wondering what you guys would do with it. My cooking options are grill, crock pot, or oven. I don't have a way to smoke it. It's not preseasoned.

Also is this cut considered "salted" since it's corned beef?

Anyone have any experience with gator ribs? I found a place that has them available locally and thought it may be a nice addition to the FL week menu.

I've tried grilling Gator a couple of times, and it always was tough. Frying is the only preparation I've found acceptable.
 
Shorts or regular? I find the regular ones to have not enough meat on top of the bones unless my butcher does them special for me

Did a regular rack. These had some meat on them but I had to search a bunch of racks (insert joke) to find them.

First what kind of grill do you have.

And if you'll rinse it first it will wash the salt out

Soak it in water for several hours. Change the water a few times. Sprinkle pepper or pastrami seasoning on it and slow cook it to 165. Then wrap in foil and take it up to 200, or so. It will be very tender.

I was thinking of doing something different than using the peppercorns or prepackaged seasoning with it.
 
Did some ABTs last weekend. Didn't make enough. :/

I've made the mistake of not soaking before and it was almost inedible. Even soaking for a few hours and rinsing makes a big difference.

Alright Coug,you can turn on one burner to control temp. Get you a smoke box. I like the pellets for a gas grill,soak em and put the box on top of burner. Use a water pan over the heat and put the meat on the cool side of of the burner and let her ride. It's a lot easier to control the temp on a gasser
 
what will be some good chunks of meat to put in my smoker these days ? since i'm suppose to be cutting down on the Bad Cholesterol from some blood work that was done

i assume Pork Tenderloin will be fine,I think I'm suppose to cut down on red meat and ground meat too :)


any ideas ?

I grill a lot of fish using my cast iron skillet. I go hot and fast with fish. Olive oil in skillet, get it hot, and drop fish in. Add some lemon wedges and seasoning. I am a big fan of Cavenders.

Also a good option is chicken breasts using indirect heat. Go low and slow with the heat. They will be juicy and tender. Slice them up and put them on a salad. Great option if you are watching the cholesterol.
 
I'm about sick of chicken,when i had some major heart surgery I ate a ton of chicken and I do have to say that I'm tiered of it and have been for several years .not saying I'm going to give it up :)

I'm looking for something to chunk in the smoker and freeze the left overs and it be good for me,even if it does taste like crap lol

as you can tell,this might not go well

Then go with pork tenderloin. It's hard to mess those up.
 
I just learned about pig shots this week. Can't believe I'd never seen them before. Those will be made is short order!

They are a crowd pleaser. The last time I made them I used Roger Wood smoked sausage but really any Kielbasa, etc. will work. I use a mix of cream cheese, cheddar, and canned chilies for the filling and pipe it in. Use a decent bacon...unlike ABT's where a thinner bacon works well. You need the side-wall to be sturdy enough to hold the filling.

Good tip. Thanks! I might blend in some canned chipotles to spice things up a bit.
