Beautiful night so I double smoked some sausages and grilled them in a skillit with some potatoes, onion, peppers, olive oil and Montreal steak seasoning. Not bad for an easy meal. Not bad At all. Have a great weekend everyone.

Grilled some chicken yesterday. The breasts were cut up and put in chicken tortilla soup. The bbq quarters were for snacking.

Tried some Tequila Lemon Chicken Quarters. Seared first on my firebox then smoked with hickory. Tasty!

Ooh how was the smoked mac?

It was ok but I cooked it too long. First time I tried smoking M&C, my wife usually makes it in the oven at 300 for an hour. I thought 2 hours in the smoker would be about right but it was way too long. It had a good smoke flavor but badly overcooked. Next time I'll check it after one hour.

I like a very creamy and cheesy mac and cheese, not sure I'd like it smoked though.
 
Used my Grillgrates for some steaks - do a nice job getting an even sear.

Did some asparagus and even though the heat is higher I under cooked it (for my tastes).

Looking forward to trying some burgers. Supposed to be great for fish too.

Seems redundant putting a grate on top of your grate. No?
 
where do you shovel the coals in at ?

There is a smoke box inside and an electric heating element just underneath that heats the chips. I've read this particular model actually works best if you don't soak the chips, just put them in dry. Vols72, some people have noticed that the bottom of the door is sometimes hard to close and may leak smoke. One guy came up with a clever idea to use a window latch.

Great idea,thanks Coug. Gonna watch some YouTube videos on upgrades I can make. My boss at work has one and he just puts the sticks under the elements. Not enough air inside the cabinet to burn just smoke.

you can use them instead but no need.

the design does two things:

1) it increases the heat of the cooking surface; for gas grills tests show it adds close to 200 degrees - in effect it is like infrared without having an infrared burner

2) it is closed on the bottom (some holes for air to pass through) so juices drop about 1/2 inch, hit the bottom and vaporize returning that to the meat instead of dropping all the way into the box or onto the flavorizer bars - it's like having flavorizer bars directly under what you cook.

another benefit is the closed bottom makes it well suited to veggies or loose shrimp or anything small that you might use a basket for.

finally, they can be flipped over for a flat surface and you have a griddle (albeit one with small holes so forget doing pancakes). I'm going to do some burgers and it would be great for bacon

well all I have is my big ass kitchen spoon to shovel coals out with :)

yikes and i'm late at getting started today,just got everything going
