The Grill and BBQ thread

If you're cooking pork to 165 you are overcooking it and drying it out. You don't have to cook pork to anymore than 145.

I grabbed what I thought was a pork tenderloin at walmart only to find out later that it's actually a "pork loin filet". Whatever that is. :) It looks just like a pork tenderloin and is even only 2.13lbs but it has a fat cap on one side. I'm thinking I can still grill this using the 765 method. How much different is this cut compared to actual pork tenderloin?

Most likely pork loin rather than tenderloin. Essentially a long chop or roast. It's still good eating and yes, you can use the 765 method. I've done it and it turned out great.

You're right but no way I could get anyone here to eat it at 145 degrees. I've done it and everyone thinks it's not done. I brine and take to 165 so it's still juicy and I get no resistance. :)

On a side note, I made lamb chops yesterday. Best I've ever made.

For those of us that aren't scared of eating it, how good is a pork tenderloin cooked to 145 though?

Depends. How hot's the rack it's for? And is it willing to do a New York strip? Maybe if you port her house so the smoke gets out the screened porch you'd get to stroke some tender loin or fillet her petite mignon.

Serious question. Where, even up to a long drive in or outside Knoxville, is the best place to get the best meats? So tender after grilled medium rare+ they fork cut.

I went to Willy's a couple of months ago and bought 4 Berkshire pork chops. The absolute best I've ever had...for $56 they should be!

Has anyone used or can anyone recommend the Acorn Kamado grill as a cheaper alternative to the egg?

I have a few friends who have these and they like them. Depending on your budget, there are better kamados that are cheaper alternatives to the egg. I have a Vision Kamado Pro that I paid around $700 for and I absolutely love it.
