What did you have for dinner II?

Just having a protein shake tonight.

For lunch I had a caesar salad and a tartar with tuna, lump crab meat, avocado, & onion. Fantastic.
 
I make these odd but amazing little "Greek" tacos on Pita bread. Olive oil and sea salt on the Pita bread, shove em under the broiler for a few to make them crispy. Fill them with grilled chicken (olive oil and a red wine vinaigrette dressing) and a mix (in olive oil, the same dressing, lemon, salt/pepper) of cucumber, tomato, olive, baby spinach leaves, and feta cheese. I make a yogurt sauce to go on top of it, just plain Greek yogurt, lemon juice, cilantro (you can use mint instead), a clove of minced garlic and cayenne pepper.

Oh the chicken has thyme on it also. I serve it with a mix of brown and wild rice, it's yummy every time. Third time I have made them and they disappear in a heartbeat. Somewhat healthy but admittedly salty! You could cut that out if you wanted to though, I don't.

Classic Estados Unidos hard-shell tacos... seasoned ground beef, shredded colby-jack cheese, finely chopped lettuce, chopped grape tomatoes. Salsas, sauces, and Greek-style yogurt available for individual diner's doctorin'.

That sounds good. It's similar to my favorite way to make chicken tacos. I use an onion, chicken, and salsa (jarred or homemade) and cook until the chicken shreds. Yum!

I take can rice and mix with rotel tomatoes. I put can chicken in with it and put it on a tortilla and cover with cheese and bake them. Our kids love those things.
