Last night, I made chicken nachos - shredded chicken breast meat tossed in green salsa, julienned sweet onions, diced tomatoes atop corn tortilla chips, smothered in mixture of shredded medium cheddar and queso asadero. They were a hit.

Tonight I'm having a Prime NY Strip, fresh green beans, and potatoes au gratin.
