What did you have for dinner II?

I tried something new last night. I had some boneless, skinless chicken thighs. I wrapped them in corn-cob smoked bacon. Placed them in a baking dish with slivered onion and Yukon Gold potatoes and baked it. Not bad.

I call it a loaded avocado. Wife had it in SA,Tx and asked what was in it.

Halve an avocado, Put crumbled bacon in the pit holes, followed by a green salsa, so that the shredded cheese holds, topped with pico de guyo. Eat with a spoon. Its skin acts like a bowl. Prep time 1 minute. Try it, it's delish.

Sketti and meatballs last night. The meatballs were from Omaha Steaks (not bad). I made the sauce.
