What did you have for dinner II?

“meat”loaf and Mahatma yellow rice

The meatloaf is actually ground chicken and Trader Joe’s fresh Italian chicken sausage.

Plus two onions, half a yellow pepper, maybe 2/3 c chopped sun-dried tomatoes, minced garlic, 3/4 lb mushrooms, tomato paste, Worcestershire sauce, eggs, Italian bread crumbs, some of the glaze stirred into the above, Italian seasoning, salt, and pepper. Something else… hmm…

Anyway, pretty happy with how it turned out.

Not having made “chili” for a number of years, and given that the missus was craving it, I made a big ol’ pot of it. We each ate two bowls the first and second nights with some tortilla chips on the side. We enjoyed a change of fare last night. Tonight, we each had a bowl accompanied by a grilled cheese sandwich. There’s still some left. I’m not sure what we’ll elect to do with it when. Right now, odds do not favor it being frozen. I suspect the missus will want to consume it in the next couple of days. “Chili” binging.
