EXIE SALAD!!!!

Quick and easy recipe. I followed it pretty exactly, although I didn’t have a full 2 pounds of chicken breast, plus I added the asparagus tips and peas in honor of early Italian spring.

Warning: if you use a big skillet like it calls for, it had better be a BIG skillet. At any rate, at least an inch deeper than my deeper than my 3”deep SS workhorse.

The cavatappi is fun. I’ve never had it before.
