Yesterday we had some friends rolling through town and I thought it would be a good idea to make Mexican. I made:

Beef tacos using a chuck roast and braised it in mole sauce, garlic, & onions.

Chicken enchiladas (used a rotisserie chicken) onion, garlic, green chilis, homemade enchilada sauce, & Mexican melting cheese.

Homemade guac.

Homemade salsa.

I started at 3 and was still cooking at 7!

Not dinner, but I had to go do bible study at the halfway house my pastor does cause he's out of town. I got home and my wife had me sausage and eggs cooked. She wanted me to go to bed full since I worked all night and went and done that. Sweet.

Ultimate California Pizza. I've really gotten into pizzas without red sauce lately. This was bacon, sausage, provolone, mozzarella, diced garlic, and an olive oil base.

I can normally get down with it, but not tonight. My favorite pizza is Big Ed's in Oak Ridge, but I wasn't up for the 7 hour drive lol.

Dinner at our favorite mexican restaurant. There was was a fire truck in the parking lot but no fire fighters. When we got to our table we noticed an ambulance at the place next door. The fire fighters hadn't even ordered and got the medical call. They came back in while we were still there, so I slipped up front and paid their bill.

There was a house fire this morning in Walker County and an 8 month old and a six year old died in the fire, the fire fighters couldn't get to them in time. Fire fighters see some of the most horrific sights imaginable. I don't know how they do it.
