Anyone have a ceramic coated pan, or cooked with one? I was interested in the fact that it heats fast, cooks at lower temps and is non reactive so I bought one to try. Haven't used it yet.

HBPW hated hers. She said they have to be handled with kid gloves so they don't form hairline cracks which, inturn, causes food to stick.

Ours may have been first generation or just a cheapo. Either way, she wont have have another one.

They can't be used on high heat and that would be tough on gas. They'll crack if they get too hot. That's why I never cooked with one at the restaurant. But fortunately that's why I wanted to try it now. I like the idea of it being aluminum on the bottom so it heats up fast and being able to cook with lower heat. I can melt chocolate or make a hollandaise and other ssuces in it instead of using a bain marie. Plus, I just need to experience it for myself.

Yeah, life is too short to cook with something you hate. Lol.

Just bought an 11 piece Cuisinart set. Copper colored ceramic insides. Fried some spam in it last night 😛 . The spam slid around in it like it had oil on the bottom (didn’t), cooked evenly and fast.

Cool brah!! I bought a 10 in frying pan with white interior, I wanted white to really accent all the colors.

Something I read also is that they don't like instant temp changes. You're supposed to let them cool before putting them in water to clean, maybe that's why they crack too. Idk. But I took mine skraight off the burner and ran it under running hot water with no problemo.

They're similar to cast iron skillets in the way that they shouldn't be put in the dish washer, just clean them out and Boon! I ran mine under hot water put a drop of Dawn on a sponge and wiped and rinsed. Hung it up while it was still hot. 👍

That drop of dawn makes them better than cast iron.
 
If I can only have one, the cast iron and it is no contest. Can't blacken or go from stove to oven with the ceramic. Can't...well I don't like cooking acidic sauces or eggs in my cast iron.

I'm thankful I have one or two of each and don't have to choose just one.

@joevol33 If you've never seen Nick of Time with Johnny Depp and Christopher Walken, it's on Prime right now. It's worth watching.
I know of the movie, but can't remember if I've seen it. It's an older movie if I'm remembering correctly.
