The seasoning sauce and the tarter both sound good and if you get a wood box too I bet you end up with a better end product.
Of course the quality of the salmon will have a little to do with it too. They don't use the best, but they also don't use the worst either.
It really doesn't matter. They probably use a cheap hardwood. Oak would be the best neutral one, but my personal favorite is hickory. For what your doing I'd go with oak.I'll let ya know!
