Still trying to get the shrimp and grits recipe from Cafe 4, dangit.

-- before anyone gets all hoity-toity at me, I've never tried to imitate someone else's dish before, and I have no idea where to start. All I have is a menu description and some not terribly useful pics online.

I didn't see shrimp and grits anywhere.
 
I've only had shrimp & grits like 3 times in my entire life. Mostly because every time I've been to a restaurant that's had it on the menu there's always something else that catches my eye like steak, a nice fish filet, or ribs. I've never attempted to cook the dish myself.

It’s the Cajun cream sauce I’m uncertain about. It’s not a standard Tasso sauce, even though they’re calling it “Low Country”.

You've never cooked grits? Your mom never cooked them?

If I'm eating grits on their own I usually prefer them a little sweet. So, butter and sugar usually.
