you can get chorizo at any of the mexican markets in town. I get it on the corner of washington pike and whittle springs. cheap and good.

Well, seeing as how sausages are kind of "homemade recipes" for each region there can be differences. For the most part Spanish style uses spices distinct to Spain like spanish paprika (shocker) and that may be the spice you enjoy. I would try the different mexican markets and see if you like those as well...any way you slice, chorizo is great.

Have you ever mail ordered spanish chorizo? I read somewhere that there is a company that imports it. I wonder how good it would be coming all the way to knoxvilleI don't think so. Johnsonville (I think) makes it but its not as good as authentic mexican/spanish chorizo (IMO). You can sometimes find authentic mexican chorizo at walmart though. Best bet would probably be a mexican market.

This ham is $1,395. That's for 8.5 pounds. The ham comes from free range, black footed hogs from Iberico. They are raised solely on acorns and aged for a period of time. Really amazing that people pay that much for a ham.

Knoxville has its own barbeque tradition which is perhaps the best there is. I was introduced to Brother Jack's barbeque around 1986. I used to hang out with Tip Jackson on Thursday afternoons waiting for the first pigburgers to be ready. For a long while I was there every Thursday, and often Friday and Saturday too. I got to know him and Eugene "Jeep" Jackson and his son Sonny.
