GAMEDAY recipe ideas!

I have and I agree it's much easier to transport.

I have as well and it works great. I actually buy holiday cake pans (Christmas Trees, Pumpkins etc) on sale after the holidays for next to nothing. People laugh when I pull out Santa in June.

Depending on what I'm doing I often use stoneware. It gives a nice even heat (not as hot as cast iron) in multiple shapes and sizes to maximize grill space.

This is a Stout and beer bread stuffing I did last fall.

BACON & SWISS DIP

Ingredients

8 slices center cut bacon, chopped
8 ounces softened cream cheese
1/2 cup mayonnaise
2 rounded teaspoons prepared Dijon style mustard
1 1/2 cups shredded Swiss cheese, available on dairy aisle
3 scallions, chopped
1/2 cup smoked almonds, coarsely chopped

Directions

Preheat oven to 400 degrees F.

Brown bacon in nonstick skillet over medium high heat. Drain crisp bacon bits on paper towels.

In a mixing bowl, combine cream cheese, mayonnaise, Dijon, Swiss and scallions with cooked bacon. Transfer to a shallow small casserole or baking dish and bake until golden and bubbly at edges, 15 to 18 minutes. Top with chopped smoked almonds. Place dip on a platter and surround warm casserole with breads and carrots for dipping.

Variation: Swiss and Bacon Dip with Horseradish - Stir in 2 rounded teaspoons prepared horseradish when combining cheese and bacon.

I make something very similar but add jalapenos and it tastes like stuffed jalapenos wrapped in bacon without all the fuss.

WB, just try them. The recipe is near the front of the post. I made them twice last year. Mine did not Look as good as what were in the pics, at least the first time, my second batch looked good.. looks don't matter when you turn the lights out.... hold it, wrong topic.. what I meant to say was the looks of the eggs do not matter, they are delicious!:clapping::dance2::pepper:


Hint: get the smallest yet fullest peppers you can find, they are easier to work with and it wont look like a meatball banana when its finished
 
Gonna do my version of corn dogs. I'll use polish sausage instead of dogs,oh man they are good. Plus gonna try onion bombs
 
Stuff an onion with whatever meat you like,wrap in bacon and smoke or grill. Oh and not my pic but that's what the look like

grilled or smoked Lollipop Chicken drumsticks wrapped in bacon. Google recipe/ a little bit of prep but freaking amazing.:D
 
Grilled mussels with garlic and Guiness. I've made this a few times as an easy appetizer. It is based on one of the most popular starters at "The Brazen Head" in Dublin, Ireland. This pub is reputed as not only the oldest in Dublin, but also as one of the oldest pubs in all of Ireland...serving patrons for 800 years.

2 lbs fresh mussels
1 shallot, minced
3 garlic cloves, minced
1 1⁄2 tsp thyme
1⁄2 cup Guinness
1⁄2 cup half-and-half
2 tbs butter
2 tbs parsley

I can vouch that they serve a hell of a pint. Not sure I've ever ordered any food in there though.

I have been waiting all year on this day, thank you Lord for allowing us to have another chance to spend our weekends talking smack, poking fun, getting goosebumps, throwing stuff we probably should not throw, screaming at the television, and of course ....... preparing good food. I have been on Volnation for 8 years now (maybe I am the bad luck lol) this is my 1000th post. To me it is about "QUALITY" not "QUANTITY", so it has taken me some time to reach the mark. I just need to work on the quality a bit more lol. Let us hope for a Great Season for 119 and no injuries.

Today, I am keeping it simple. I have no plans to grill or smoke anything today, I am going to prepare Shrimp Cocktails early and for Game Time I am going to do the Pizza Rolls that were added here, they look simple but yummy. Now.. next week (huge game and I could not handle paying the prices for tickets to come back home) I already have a big plan and will be trying the "Q" Mac n Cheese Boca added here, along with some other goodies.

Any bbq and lots of beer. People here in Arizona think bbq is just steak or chicken on a grill. SMH 😡
