Beer cheese for my brats

Homemade Volunteer Victory bean-less Chili
Sausages with peppers and marinara .. Been simmering since early afternoon 👍

Nice. I've been looking for an easy beer cheese recipe for brats & pretzels.

This was a Tasty (the facebook group that posts quick recipes) recipe.

I won't make it again. To get a good smooth cheese, you can't bring it to a boil. Once it gets hot enough to boil, the cheese sauce becomes grainy.

This recipe has you leave it on the heat until it thickens, which happens only once you boil out the moisture, which leaves you with a grainy cheese sauce. It tastes alright, but I've had better, and the texture is nowhere close to being good. I wouldn't serve this to anyone.

Oh well, live and learn.

Exactly...you don't know until you try it. Thanks for the update. On to this week. I'll be watching the game with my dad so I'm sure he''ll want "ball-game" food so I'll post some pics.
 
Thanks Boca for the recipe on the mac/cheese, it was yummy. To be honest, I did not eat much until the next day, my hunger was eliminated about halfway through that game that I shall not mention. However... we ate the dickens out of it for the next two days!

Is anyone preparing Gator this weekend? I found some Gator Sausage in the seafood section, I may try to prepare a cheese dip with it Saturday

Hey Chuck, I'll be in Birmingham this weekend. Got a restaurant recommendation for catfish?
 
Fish Market would be my guess Hoptown. I have eaten there once and what I had was not catfish but it was good. Also check Dixie Fish Company, I have not eaten there but hear it is good. Remember, I am from the Hills so what I know is limited! Come by, we can yell at the tv together:) I will go buy some catfish and make some slaw and hushpuppies :)

Or, seeing as how you may have things to do we can meet Sunday at the Dixie Fish and celebrate our Victory!! Boy, that sounds lovely rolling off the tongue!

Thanks for the invite. I'd love too but the family is coming in for my son's birthday. He's an Auburn
grad so we'll both be all yelled out on Sunday. :good!:
 
LOL, all you must do then is find good Catfish and Represent! I will double check for you tomorrow and get back to you on the catfish, but I think those two locations are perfect. If you need a Hole in the Wall location I will check on that too. By the way, no Auburn Nor Bama fan sceers me:)
 
whats the amount on each by the way? Play it by ear?

I make it by the gallon, it goes pretty fast.
2 cans V-8
1 can Rotel, blend
1 small bottle Lea and Perrin
2 Tablespoons horseradish
1 Tablespoon anchovy paste
hot sauce

I used to use a 1/4 cup clam juice, but the anchovy paste is much better.
