Who told you that sangiovese should be chilled? Chilling it does serve to suppress the flavor. With sangiovese that could be considered a positive. However, they're not actually supposed to be served chilled.

It's actually optimal just below room temp but what do I know? I'm only a level 2.

Me too, and I've been an avid wine collector for well over 30 years. By just below room twmo, it sounds like you're implying cellar temp or slightly warmer. I don't consider that chilled.

I'm not a big fan of sangiovese, so do prefer it a bit chilled to mellow. It's funny because I love the tannins in mountain cabernets. Just a palate thing.
