You have gotten some good advice on some places in very rural areas. Those are, frankly, some of my favorites. I love deep SW NC. Skip across the Nantahala to TN, cruise through lovely Madisonville, ride bikes across the Tail of the Dragon or the Cherahola Skyway? Yes, please.Complete aside.
At 60 yoa I find myself wanting a more serene daily existence in my retirement than sitting in Orlando traffic for an hour to go 10 miles, only to be greeted by 105 feels like temp when I open the door to step out of the Tesla.
Now, I know I probably can't have a Tesla in the mountains of north Georgia, North Carolina, or thereabouts into Tennessee, but I am flying up to go to Blowing Rock for a few days next month and plan to do a little exploring for a modest sized cabin. Have a client with a place in Blairsville, Ga., says its 90 miles from Atlanta, 90 miles to Asheville, and 90 miles to Chattanooga, so I'll be investing a day of my time in that general vicinity.
Any advice on places to consider?
Hiawassee is smaller but gets you on a lake.
Tacoa has a decent down town.
Cleveland does too, a bit closer to Atlanta than the others.
Dahlonega is pretty similar. nice down town, some claimed history with the gold rush, small shops in the area, with plenty of recreation (for NE Georgia).
Ellijay and Helen are tourist traps, I would probably avoid.

Blowing Rock is a little "elite" for me, and quite out of budget, but there are phenomenal things to do around there. The Moses Cone Park is a really nice little walk if you need to stretch your legs. I love the Linville Gorge area as well as Grandfather Mtn.
If you want a little more action/options, I'd give Hendersonville a look. Just South of Asheville. Great little vibrant downtown with breweries, music and arts festivals, etc. In the fall, the apple orchards down the road towards Chimney Rock are fantastic, and a day at the Lake Lure Lodge is always nice (Bonus: practicing your "Dirty Dancing" lifts in the lake.)
The more I think about it: Hendersonville/Flat Rock it is. Fantastic quality of life.
Added bonus (for you): Tesla charging stations nearby.
Biggest negative: Freakin' Josh Stein. Ugh.
