I threw caution to the wind and put a new menu item that I made up on for next week. Forget I’m short on staff, forget that there’s some items I can’t order and completely throw out the window time is not my friend, but by he!! Cooking will be fun this week.
 
New menu item.
Chicken seared, in bite sized pieces, broccoli, and a tomato based sauce, light on the tomato, white wine and fresh parmigiana. I’m still working it in my mind. It’s hard to describe the process I go through. This one has been sorta developing in my mind for years. I know I have to push myself or not, that’s never good. I just knew it was time. IDK.

Sounds good! Add some garlic, oregano, fresh spinach and a couple of cherry tomatoes. Or not and tell me to mind my own business. Lulz.

I wouldn’t do that or I have no business posting about it. I’ve added chicken. I cooked last week and got in the weeds. I don’t know how that happened except I needed a challenge. Probably doesn’t make much sense. I’m already going with the garlic and Italian spices and hadn’t thought of spinach. That’s part of why I put my original post here. Cherry tomatoes, I’ll borrow that. What type of tomato I think has what has been my sticking point.

Really doesn't matter but San Marzano is always a good choice. They're the best tomato flavor and low in acidity.

I love adding spinach and (sliced and roasted) cherry tomatoes to chicken recipes like this.
