This thread is seriously inspirational! I'm a complete newb to smoking, but the trial and error isn't a bad gig.:)

My first attempt at beef short ribs has hit the smoker.

Can't wait to see them. Been wanting to do beef ribs for a while.

What model is your probe and does it use wi-fi?

They came out good, not great. They had nice flavor, but could have been more tender. Didn't use the crutch this time but think it would have helped.

The thermometer is a ThermoPro TP20. It's not wi-fi enabled. I've been happy with it.

Well it looks great. I tend to wrap beef ribs in a disposable aluminum pan with some cheap red wine. It's worked really well for me.

Looks like the VN had a productive meat weekend. I smoked some bone-in, skinless chicken breasts.

Used this marinade (overnight - also left out the mustard)

Used Maple and smoked at 275 for about 1.5 hours.

Great tip.

The red wine (not too much) will steam the ribs a little and further break down the connective tissue and thus making them more tender.

I've also made this recipe a few times and they are terrific. The only subs I made was Dale's for Worst. and red wine for the beer.
