The Grill and BBQ thread

I may have missed it... what are you cooking those on? How many different setups will you use... that is a ton of meat.

I didn't want to tow our Pitt's and Spits rig all the way from Houston, so a buddy in Nashville is bringing his rig. I've never seen it and don't know what it is. But, he places regularly at Memphis in May and caters events for his Knights of Columbus, so I deferred to him for cooking space. He said he's bringing his "small" rig.

I'll post photos of it fully loaded.
 
Going to finally be picking up a Komado Joe next weekend when the roadshow comes to Nashville! So excited. Already planning what to cook first. Any ideas?

They sell the demo models at a discount from the roadshows are used to. Go early and ask the guys doing the roadshow.

I unfortunately couldn’t get off work for the opening day but my fiancé will be getting there at opening to try and get the Big Joe Demo model deal. We will see.

I believe they throw a Joe Jr. in on the deal as well as lump charcoal. Good Luck! Hope it works out. I have the Big Joe and love it.

Get the Joetisserie and do a chicken. Easy and as good as it gets when cooked on the joe
 
Wedding reception cook has begun. 7 prime briskets and 8 bone-in butts in the Backwoods Smoker set up with the Cyber Q Cloud. Second pic is my Chipotle Lime Potato Salad.

Talking about burgers. What is that grilled flavor? What makes that grilled flavor? Is it in the meat, is it in the fuel source, is it a hint of smoke? Is it simply the Maillard reaction?
 
Have you made your own homemade version of Lonesome Dove's "Sullivan Smoker" yet?

Have you made this at home? Did you char your wood chunks/ chips prior or just light 'em up? Looks like a fun drink...especially in the Fall in East TN on a Thurs or Friday night before a game.

Yes, multiple times. I just put a JD barrel chunk in with my grill coals for a few minutes, take it out with tongs, and put it under a pie plate cover with the drink. Uncover in a minute or two, voila!

I just looked that up. Very cool indeed. I've put a pot of water and smoked it to make ice cubes. Great to add smoke flavor to drinks but it's nothing compared to this.
