Anyone here cook on an outdoor brick wood-burning grill? Building one of these sometimes gets discussed while settin’ and sippin’. It would be something really basic, like this: https://dengarden.com/home-improvement/Build-Your-Own-Brick-Barbecue

How do you modify your usual charcoal grilling techniques? Are these basically for hot dogs and burgers, steaks and pork chops?

I like the possibility of it doubling as a fire pit (we’re talking a tiny backyard!)

Me too!

Any info would be appreciated. I’m very curious, especially how you would control airflow to the wood (ground level), and to the coals (in-between level.)

Although I ran it by Hubs, aka Mr. Dedicated Weber Charcoal Grill Guy, and he isn’t interested in a permanent grill like this. But he’s on board with a paved area with benches on two sides plus room for a grill or portable fire pit (one at a time), which is what I actually wanted, so 👍🏻.
 
Had some grilled and sauced wings. Sons 2nd time fixing this sauce. Mind blowing good.

He starts with a bottle of Frank's wing sauce and a stick of butter. Adds ginger, garlic, honey and simmers it off for a while while wings are grilling. Finishes off with a little cream to bring it all together. I don't think I left out anything.
 
Chanterelles

Really not that difficult. You just have to boil octopus for a long time before grilling. I included herbs, garlic, peppercorns, and lemon in the pot.
Nothing against a filet, it's the best. But....you had raw oysters. Why was anything else needed at that point !!! Well, maybe the chantrells.
 
Anyone have suggestions for smoking a turkey? I’ve never done one before. I have a rec tec and a Kamado Joe. I think I’d rather smoke it on the Kamado Joe unless someone talks me out of it.

Apple cider based brine, bbq rub that runs on the sweet side (no binder needed) and smoke with a mix of hickory and apple/cherry. You'll thank me later.

I've made variations of the Mad Max turkey recipe. It's very good. The gravy is excellent.
