Because it's a 1911...
Honestly, it's a pistol you either love or hate. I find it to be the most accurate for me and fits my hand perfectly with the grips I use. I'm not big on DAO or even double action triggers, so the single action fits me perfectly. And the grip angle is spot on for me. Naturally points and I'm inherently more accurate with a 1911 (and a Hi Power, but different thread).
Overall, it's a pistol you can tinker with and get more performance out of if you know what you are doing. Aftermarket parts have flooded the market over the years and just about every manufacturer has a 1911 on their inventory sheet. But being able to tinker with it, new trigger, barrel, etc makes it enjoyable to wring performance out of and a lot like an AR in that aspect. And the fact it's been around over a hundred years and still going strong says a lot about the design itself. It's still a viable defensive arm to this day although it has been surpassed in ruggedness by other designs. Someone on another site said it best. "If I'm heading out into the mountains of Afghanistan for a month, I'll take my Glock. If I'm facing a home intruder, I'll grab my 1911."
On the other hand, it's also a pistol that garage gunsmiths think they can perform the ABCDs of gunsmithing on (That's Assault by Brownells Catalog and Dremel). And unfortunately, if someone doesn't know what they are doing, they tend to make it utterly unreliable. Again, much like an AR in that aspect.
But overall, it's a pistol you either love or hate. For me it comes down to how it fits and how many times I'm hitting the X ring of a target. And with a 1911, I'm better than other pistols.
