As far as bang-for-your-buck, I don't think you can beat a Boar's Head Ultimate at Publix. Of the true sandwich chains, I would go Firehouse>Lenny's/Nixons>JJ>>>Subway.

Gus's/ Sam & Andy's are near the top. I used to work at Sam & Andy's in Farragut in HS and college. Gus would always sell us beer on Sunday morning after being out all night...of course he would charge a drunk tax, but that's ok.
As far as chains go, Jason's is good. Bellacino's is also good.
Jimmy Johns and Firehouse are OK.
However, if you can find an Italian grocery store/ deli...they tend to make some pretty tasting sammaches.
I believe there was a Schlotsky's on the strip when I was in school at UT. Cannot recall with certainty, but I want to say it was down on the Pilot end of Cumberland.
Leftover Easter turkey and ham on rye bread, with spicy mustard, green lettuce, a 5 pepper blend seasoning, oregano, cherry peppers and smothered in extra sharp cheddar cheese trumps any sub sandwich shop.
