Did a pork roast in the instant pot yesterday. Carnitas yesterday, bbq sandwiches and tots for dinner tonight.

I did a big clean-out and organization of the fridge today in preparation for Christmas cooking.

- oh right, dinner for me was leftover white chili and a bag of sugar snap peas. Hubs killed off the chicken Marsala, and some remaining veggies from another chicken dish.

I had to look up what Carnitas are, now I want some. I never had anything quite like that and the pics/recipes I found for it look very good.

I don’t know which InstaPot recipe you’re using, but if it doesn’t include this part, do fry (sear) the already-cooked pork, partially or totally shredded. It takes it to another level.
