Rub down a ~trimmed pork shoulder with a mixture of salt, black pepper, oregano, and cumin. Set it atop chunks of onion in the slow cooker. Cook low and slow.
Remove and shred the pork. Render any fat blobs in a broad skillet. Add olive oil if/as needed. Sear batches of shredded pork such that the pork is both caramelized and juicy, a mix of textures.
Viola! Carnitas. Eat immediately however you wish. Refrigerate or freeze leftovers. These reheat perfectly. So versatile, the uses for leftover carnitas cannot be listed here.
