I’ve never made the individual ones like Vette posted.

I just do a ginormous frittata in an oven-safe 11” skillet. It looks like a crust-less quiche.

Best way ever to use up a ton on vegs from the fridge!

Well these were rather simple....they were Jimi Dean....just put them in the microwave for 1 min and 30 sec and you are all set

Round 2. Just left the gym, was starving. Went by waffle House, that's conveniently located right behind my gym. Got a Texas melt with bacon, tomatoes, and cheese. Hash browns, sausage, and fried eggs.

Nothing beats some good potato cakes made from leftover mashed potatoes. As far as dinner for me today, I'm ordering Chinese from this local place called China Wok. I haven't had it in some time!
