It's a reference to where they line up in relation to the offensive linemen and their gap responsibility. For example, someone playing the 0-tech would line up directly over the center (like a 3-4 nose tackle). A 5-tech lines up over the OT. There are a ton of variations. A quick google of "defensive line positions and techniques" should provide you with all the information you're looking for.
