@VolNExile I saw you mention sweet potatoes earlier. Have you ever bought any at the Asheville farmer's market? We got some there last year that were amazing...had great flavor and were very sweet!
No, but I’ll give them a try. The problem is that I don’t like sweet, or at least not that kind. I fell in love with Cuban boniato, but I can’t find it up here, and I don’t like the suggested substitutes.

But since I don’t need to add a starchy food to my list, I’m not going to worry about it.

— other than it seems like every other Asheville meal involves sweet potatoes, collards, kale, and IPA. 🤢

Popeyes chopped spinach, cooked in some butter, with soup beans and cornbread, mmmmm! I did like Behr's recipe he mentioned, gonna try it.
 
A couple of years ago somebody had some raw spinach salad and I thought well since I’m older maybe my taste has changed so I’ll try it.

I know the feeling, I’ve said this before in the Zone, Dad always told me that my tastes would change as I got older and to keep trying stuff as I got older. He was right on some, but seafood still hasn’t caught up to my taste buds.

I love spinach, fresh best but I also like frozen chopped for certain things, like oyster Rockefeller. Fresh spinach with a lemon butter sauce and a white fish or grilled chicken....or scallops.
