Armadillo Eggs, yes Armadillo Eggs!!!

Take a whole jalapeno, fill with your favorite cheese, and mold a layer of sausage around it to completely enclose the jalapeno, then put in smoker for about 45 mins to an hour at 250!! :rock:

Sounds weird but they are delicious!

I will be trying these this weekend. Thank You. This will go great with my apple pie shine. A great game, some Miller Lite and hot wings. The anticipation is killing me.

Corn Dip

2 - 11 oz cans of Mexicorn - drained
2 - 4 oz cans chopped green chilis - don't drain
1 - 4 oz jar chopped jalapenos - drained
2 cups shredded cheddar cheese
1 cup sour cream
1 cup mayonaise

mix together and serve with corn chip scoops and enjoy

Sweet mother of god! How about taking cooked sausage and mixing it with cream cheese and stuffing that into the jalapeno THEN surrounding the jalapeno with more sausage..

Stadium food BUT ya'lls looks and sounds better... Pre game lunch at Litton's - about as close to home cooked as can get on the road IMO. [ have dreamt of their desserts since last November..

5packs of hickory smoked tuna
2 containers of jalepneo cream cheese
Mix in a bowl
Grab some ritz crackers and it makes one of the best dips

Spicy rub ribs with sweet bourbon glaze on my game day smoker. Or sausage eggs which is hot Italian sausage mixed with ground beef even amounts make thin patties then add jalapeño peppers and cream cheese put two patties together with pepper and cheese in middle cook like a burger or smoke

beer and baloney sandwiches :) cut the sandwiches up into little squares and stick a toothpick in em,if you want to impress your company,but make em bring there own ketchup

i would break out the BBQ Vienna Sausages on Ritz Crackers with a can of spray cheese,but Hey,I'm not sharing the good stuff :pepper::pepper::pepper::pepper::pepper:

Watched a friend eat the jelly like substance out of a can of Vienna sausages when I was extremely hungover, haven't touched one since.

Here's one I posted in the other thread:

Buffalo Chicken Croissants

Ingredients
1 8oz package of cream cheese softened
½ cup of hot wing sauce (Frank’s or Hooters, etc.)
½ cup of ranch dressing
2 10oz cans of chicken drained
½ cup of crumbled bleu cheese
¼ cup of minced celery
1 tube of mini croissants

Separate croissants.
Place about 1 tsp of chicken dip and roll up.
Bake as directed on package.
Serve with Bleu cheese dip, ranch, and wing sauce.

Here's an easy salsa recipe:

Drain (1) 28 oz. can of tomaters. Save juice.
Finely dice 1/2 of a small onion
Finely dice 1 or 2 seeded jalops.
Add 1-2 cloves of crushed garlic
Add 1/2 cup of cilantro
Combine in a blender.
Add a little cumin, salt, pepper, paprika, chili powder, and fresh lime juice.

Pulse in blender.

I'm putting a 12lb pork shoulder on my smoker around 11 the night before and adding 4 slabs of baby back ribs and 4lbs of smoked sausage around 7 game day morning

First of all great looking cooker. 2nd, those sausage eggs sound like a new addition to my gameday menu! Thanks for sharing.

What brand are these lime tortillas ? Couldnt find any this morning

umm.. Tostadas I think.. they are triangular.. the name brand bags..... only ones ive ever seen actually.. ive not bought any since last football season... OH MY GOSH.. Do Not Tell Me they stopped making them!!!:banghead2::gun:

Anyone addicted to the white cheese dip served at Mexican restaurants (mostly in E. TN)???? Here's how you make it:

1 pound of WHITE American cheese. Have them slice it fresh at the store's deli. Preferably Land 'o Lakes brand. Other brands will do, just not as 'rich'.

1 small can of diced jalapenos

1 small can of diced green chili's (optional, but good)

1/2 to 2/3 cup of half 'n half or heavy whipping cream (regular milk will do, dip will not be as creamy). If dip is too thick add more liquid, if too thin add more cheese. Duh.

Combine all ingredients in a sauce pan and heat on low to medium heat, stirring frequently to prevent scorching.

You will be loved.
