First thing I make every week...Sausage Balls...Keeps people munching while waiting for whatever comes next. I've been making them for so long I don't measure anything anymore so I'm estimating below. I combine as much cheese as the sausage will hold, probably comes in a 16 oz. bag, takes about half to 3/4 of a bag usually...
1 LB Tennessee Pride Hot Sausage (I prefer hot, but mild is good too)
1 Cup Bisquick
1 Cup Cheddar Cheese (Sharp)
In a bowl, combine the above, mush together well (it is messy). Once combined, roll into 1 inch balls and place on baking sheet. Preheat oven to 375, place sheet into oven for 30-45 minutes (temp and time will vary for different ovens).
Easy to double recipe.
Note: I've tried other sausages, Wamplers, Bob Evans, etc...they never turn out as good for some reason, gotta be Tennessee Pride.

If you want something a little different then make a log. I've cooked them on the smoker and on the grill low indirect heat could probably do it in the oven. Take a sheet of wax paper line it with strips of bacon about 12 by 12 inches length and width, take a pound of sausage spread it smoothly over the bacon strips, line this with peperoni's, add shredded cheese on top of that then have sliced onions, peppers, and anything else that you want. Using the wax paper roll it into a log and the bacon should be the wrapping. I am actually smoking two one hot one not, enjoy and GO Big Orange!

Block of Velveeta cut into 1/4 in cubes
lb of lean ground beef 97/3
Pack of taco seasoning on the ground beef
cup of hot el Paso salsa
cook the meat and heat all ingredients in microwave stirring regularly until completely melted
I like the blue corn chips.
Makes a lot so be sure to have company or something to stir it in and more than one bathroom in your house lol it works on your gut like petros
Hi! Talking about football and food just gets my mouth a waterin'. My brother, "Volosaurus rex" told me about this thread, and, naturally I had to join in. Normally, on game day (if we are not at the game), I make a plethora of finger foods such as hot wings, meatballs in BBQ sauce, Pigs-in-a-Blanket and one of my own favorites, Bacon/Club Crackers. However, I started a new tradition in 2002. Tennessee's first game of the season was being played here (in the Tennessee Titans stadium in Nashville, TN) against the University of Wyoming. The game had a 3 PM kickoff time and we had tickets. So I decided to have my first annual University of Tennessee Pigskin Brunch, a tradition to start every football season, that I have kept up ever since. if we are going to be at the game then I have it the Saturday before. Otherwise, I have the party a few hours before the game starts. And, since it is a Brunch, I have the traditional items (Bacon, Sausage, Country Ham, Country Fried Steaks, Eggs, Hashbrowns, Biscuits and Gravy). This year, since the game will be at 6 PM, my start time will be later, but it will still include the breakfast foods (in keeping with tradition, or course). I am looking forward to see our beloved Volunteers in action tomorrow. Until then, GO BIG ORANGE!
