They do. I've heard they make rare exceptions to that rule but they only allow them to operate one store, they contractually have to be there a certain amount of hours per week, and that number isn't 20 or 30. It's at least 40. It weeds out people who are looking for a passive investment and don't want to be hands-on. Everything that they do flows down from there - they could have a great hiring program, great training program, great food, etc., but if the restaurants were run by lazy or incompetent people it wouldn't matter. Their franchisee selection process and who they end up picking to run each restaurant is their secret sauce.Just anecdotal, but my understanding is they only allow a franchisee to own one store (or maybe two now). That forces the franchisee to be hands-on. I’ve also been told that they require the franchisee to have a master’s degree. I have a colleague who knows an owner of one.
Also, another big reason why their service is so good and you don't see "Help Wanted" signs at CFA is because they start people, even 16-year-old high school kids, at $15-16/hour and they get every Sunday off. You get what you pay for, including labor.
