Finally tried Full Service BBQ in Farragut -- very impressed. If you like smoke, it will probably be your favorite Knoxville Q. We had the ribs (amazing bark), pork, and chicken (surprisingly moist). The sauce is tangy with just the right amount of heat.

Lol, I don't have 10-15 hours of spare time most work days.
Know that feeling, but I love my homemade Q. I used to have a full fledged Oklahoma Joes Smoker and I had to baby that thing and watch it all day. Got rid of it and got a pellet smoker, best move ever. Still using compressed wood pellets so the flavor is there, but it self regulates the heat, so no more checking the temp every 30 minutes. The last shoulder I smoked took 14 hours. I set the temp at 225, put the shoulder on, filled the pellet box and walked away. I think I checked the pellet box 2 times in 14 hours and didn't open the grill until I took the shoulder off after 14 hours. You get the flavor and lose the hassle.
I brine the butt overnight. Next morning season it up. Set my BGE on 350 with the plate setter on. I can smoke a "turbo butt" in about 4-5 hours. Blow right through the "stall". Moist as hell, nice smoke ring.
It doesn't need to take 14 hours.
