Most of the time, the best BBQ I've had has been in borderline dumps.
Part of the fun, imo.
From what I've learned in this thread, if it's served on styrofoam and the decor is crappy the place is worthless.
There's a new BBQ place in a converted gas station on Kingston Pike just a bit west of Pellissippi and next door to Home Federal Bank. Their smoker is next to the Pike and the visibility must have been about 100 feet when I drove by about two weeks ago. I got the impression that they don't know WTF they're doing.
Update On Copper Cellar Concept on Middlebrook:
They found out last minute that they needed to add a sprinkler system. Plans had been previously approved by the FD but then for whatever reason came back and changed that on them last minute. They are about 95% done in the main dining area, and are finishing that up as well as the pipes running to the outdoor patio, and then they will start on the parking lot. A really rough estimate for opening is about 2-3 months. Being a new concept the name probably won't be released until the last minute.

If the FD is requiring that they sprinkle the parking lot, then the Copper Cellar isn't getting the bribes to the right fellers.

Finally tried Full Service BBQ in Farragut -- very impressed. If you like smoke, it will probably be your favorite Knoxville Q. We had the ribs (amazing bark), pork, and chicken (surprisingly moist). The sauce is tangy with just the right amount of heat.

Best BBQ around. Would suggest either the nachos or the brisket. You can go on Friday and get burnt ends. I agree on the Bread of Heaven. He used to have a lunch buffet in Alcoa when he had a store. That place was my favorite BBQ, something about his sauce I loved. Since he no longer has the store for lunch I prefer Full Service.I live very close to there and the place is usually bumping when I go past. The one in Maryville is pretty good, have not tried this one yet. My fave BBQ is Bread of Heaven in the Alcoa Big Lots parking lot!
I just ate my own pulled pork bbq. Decent but not great. I did it in a crockpot though so to be expected. Real deal takes a lot of smoke and lot of time and I had neither.
