Jersey Mike's has a pretty good cheese steak.

I don't recall if I have been given a cheese option, though.

The chicken one is good too. I usually do the big kahuna minus the shrooms. Basically a cheesesteak with jalapeños.

I think it's Chicago-based but has spread at least to NY, they have those giardiniera peppers that Chicagoans put on Italian beef sandwiches and I love them

The Potbelly that was Knoxville lasted about 6 months before it closed. Not sure if it was a bad location or what as I thought the food was decent.
