The Grill and BBQ thread

I know this is a grill and BBQ thread but I've got to share one of my moms easy cobbler recipes. I've done this on the grill and my mobile fire pit at the lake so maybe that qualifies. I always preferred the taste of it over the harder ones she would make.

Drop a stick of butter in a 9x13 glass pan and put in the oven. Preheat to 350 and let the butter melt. Put 2 cups of self rising flour, 2 cups of sugar, and 2 cups of milk in a bowl and mix well.

Pull the 9x13 pan back out with the butter fully melted. Add whatever fruit you want to the 9x13 pan until the bottom is covered. Pour the flour mixture over top of the fruit and bake at 350° for around 40 minutes until you can stick a toothpick in the middle and it come out clean.

She called this her simple simon cobbler. I've had apple, peach, white peach, blueberry, and blackberry. All delicious. Just made a blackberry cobbler tonight for July 4th dessert. Hope you'll don't mind me putting it in the thread. Thought alot of you would enjoy it since you like to cook/eat like me.

Edit: If you do it on a pit or the grill use a foil pan and not the glass pan. Lol

Just me and one of my sons tonight so I thought I'd make a personal grilled "simple simon cobbler" using a small cast iron skillet. I just halved the recipe and it worked perfectly. Your recipe is on point sir :salute:

Trying something new - Curried Shrimp Stuffed Mushrooms. Pretty happy with these - I'll most likely post the recipe on my blog Friday for those interested. Pretty easy really, just cooked up the shrimp in a curry based sauce and spooned into the shrooms for finishing on the grill.

Looks delicious! What fruit did you use?

Edit: Did your bottom of the cobbler burn on the grill?

Cali that does look fantastic and I don't even like mushrooms.
 
Vegetarians say it's a substitute for meat. Well it isn't... but it was still good. Lol

I've heard that all mushrooms are edible, but some just once.


Anyway, haha, are those Crimini mushrooms and provolone cheese?

Did some what we call Mexican corn on the cob on the grill for appetizers before our hamburgers later.
Grill 5 to 8 minutes, then 1/4 turn and repeat until cooked & speckled like picture. When they come off hit it with a tablespoon of mayonaise all over, sprinkle with Feta cheese, and then sprinkle with chili powder. Amazing taste and will blow you and your guests away.

Had to come back and let you know that I tried a variation of your recipe and it was amazing. Only thing I did different was used a Greek yogurt and cilantro lime sauce to coat the corn so that the cheese and chili powder would stick instead of the mayo. Thanks for sharing! It's now a new favorite to add to the rotation.

Wow, looks amazing. I'm not big on the cilantro taste but I'm willing to try it.
 
I had to try something different because my GF won't eat mayo. When I get a chance to make it for just me I'm gonna try the mayo route too.

I've got the same problem. Nobody here eats mayo and they won't even try it. I'll have to give that a go as everyone love cilantro here.

This week I'm on my own so I can eat whatever I want. Lol I smoked some corn and made elotes. I used Mexican queso fresco for the cheese. I absolutely loved it!

I hadn't thought about smoking the corn instead. I bet that added another level that was delicious. I may have to try doing that next!
