Okay, Big day tomorrow!! I would assume most are roasting, smoking, or grilling some Pig. I have decided after a week of debate with my alternate ego to oven roast a pork shoulder.. otherwise known as a Boston Butt! I plan on having it in the oven for about 8-9 hours at around 235-250 degrees. I will make pea salad (with fresh bacon in it of course, and mild cheddar cheese cut up into iddy biddy bits along with some shards of red onion), and maybe some wild rice and of course some yummy bread. We can't forget to add baked taters (the little red ones) and I bought some Honeycrisp apples to bake to add along beside the pig, just a touch of cinnamon added to them and of course some pork gravy stirred up from the juice from my pig. Yup, if we Do lose in the 4th, this will make it a tad bit easier. Let us hope that won't happen lol.

Well I'm working again today so no cooking again.. So I have no idea what we are doing for the game. Probably just get pizza

Louisiana style red beans and rice slow simmered on the Big Green Egg to add a touch of smoke along with king crab legs and jumbo shrimp. Hopefully I don't have to pick up all my broken cooking utensils out of the yard on Sunday morning the way I did after the Oklahoma and Florida games.

I love it. I actually have two. They are extremely versatile. I can cook low and slow at 225 or sear at 700. I have cooked everything from burgers, to bbq pork butt to bread to chocolate chip cookies. Cooking in Dutch oven on it today.

ha ha, yes ty ty, I know we all are not as enthusiastic as we should be, I am only hoping this will lighten the stress a bit. I would love to have a bowl of gumbo! I have personally never made it, I wish I had someone give me some ideas on how to do it. does it need to be like "oceanie" with shrimp and whatnot? Or do I use sausage and such, or a combination?
 
Guys (and possibly a girl here or there), I will be honest.... I do not think I have ever been at home for a game and not prepared some type of meal for our Game Time Events. However, due to recent events (the fiasco I have endured on Volnation with the losses and my sadness with said topic, along with the fact I recently moved and have much to do in the morning before the game comes on) I will not be preparing a delicious (at least to me) meal for this game. Yes yes, call me names... it is okay, I can endure them, I have been around for a long time; when we kicked everyone's Booty and now over the last several years when we must worry about Kentucky, I have been here. SO.. one game is not that bad. (Also, the agent I closed with told me the little gas station right down the road has KILLER CHILI BURGERS, so I shall investigate said statement, just before kickoff)

Eating Chinese buffet tonight, so I'm probably having dog.... Woof woof.... It's a dog eat dog world and I like the way dog taste....go vols!!!

Simple but delicious Velveeta cheese dip.

1 32oz (long block) Velveeta cheese
1lb. ground beef(or substitute another meat)
2 cans or Rotel (whatever heat level you prefer)

Brown ground beef, drain, set aside.
Cut Velveeta block into smaller squares and place inside microwave safe bowl.
Add both cans Rotel and microwave, gradually stirring in between.
Add beef to the bowl and stir once the mixture is loose.

That is some good stuff! It is called CAT POOP DIP by the way (that's what it looks like dang it):good!:
 
Smoking some spare ribs (trimmed to St. Louis) with cherry logs, mess of pintos with smoked ham hocks, knocked back with Highland Gaelic Ale and Stone IPA. It takes the sting out of watching my team flail.
