Have ribs rubbed and ready for the smoker in the morning. My wife and oldest daughter will be home from a week long mission trip and we plan to have all of their favorites waiting on them just in time for the game. We'll have ribs and smoked Bologna, hamburger rotel, homemade Petro's, and homemade key lime pie.
Most of all we'll be glad they had a safe trip and made it home. We'll all be cheering for the Vols. GBO!!

Smoked chicken cheese soup with poblanos and jalapeños, along with the most beautiful pork shoulder slow cooking in the smoker with a nice spicy rub for pulled pork sandwiches.

Oh. My. Goodness. #yummyyummyinmytummy

Capped off with North Peak Brewing Vicious IPA.

AND A VOLS VICTORY OVER THE FREAKIN DAWGS FOR DESSERT.

*the theme for our backyard tailgate is "Smoke them Dawgs"

A roll won't cut it. I've got a few of them for tomorrow. As stated before it will be picked up before the ribs. That's why there are multiple sticks.
 
That reminds me, I have yet to make those ARMADILLO (HOWEVER YOU SPELL IT) EGGS. I have some of those Bama fans coming over for that game, I wonder if I can fill those with Elephant pooh and serve them.. ???????? Minus a few filled with cream cheese for me of course:dance2:

Allright what's everyone got going on this weekend. Wifey had surgery today so she's getting a Ribeye and Crab legs.

Well, I figured what the heck, lets pull this back up and see if anyone has any new recipes to share. I am doing wings Thursday, I have made a couple of friends down here in the God forsaken Land they call Alabama since moving here, I think I have almost convinced them to Love Orange.. heh heh, may take a bit more work but I am trying. They are coming over for the game and since it is a week night I will keep it simple. Anyway I am going to try that "Confit" wings idea for Thursday. They say it makes the skin extra crispy so we will see. You have to cook em a couple days in advance at around 225-250 for 20 minutes, I prefer peanut oil by the way. After that let em rest for an hour and then FREEZE em until ready for use. One game day take out 30 minutes before you need em, then Fry them for about 15-20 minutes at 400, then toss in whatever sauce you have decided to make.

Anybody grilling steak or chicken, Dales and Italian dressing, put the meat in a bag let it marinate over night. So good you can stick it in top of y your head and your tongue will beat your brains out trying to get to it.

String cheese wrapped in bacon and deep fried. Just take cheese outta the packet, wrap it in a piece of bacon, heat oil in a skillet and fry it up. Simple but tasty.
